The
Penang Apom (
Penang Hokkien:
A3pom1 [a-pom]) is an Indian pancake in the same family as the Chinese
Apong, which is also called
apom balik, and the
Ban Cien Koay, sold by Chinese and Malays.
To differentiate them, the apom is often called Indian apom. For these pancakes, apom is the thinnest, having the thickness of a paper. Part of its characteristic comes from its flakiness. Good apom has to be crispy on the side, while the middle is thick and soft. Unlike the apong or the Ban Cien Koay, the apom is usually plain without any form of fillings - and puritans prefer them that way!
