It's Wednesday, the middle of the week, and usually, I would be off carbohydrates. However, in the past few days, my wife and I have been talking of baking a fruit cake for church. Every family takes a turn to provide morning refreshment for church, once every quarter, and it so happens that our turn will be on Christmas Sunday. So, though it is still months away, we have already started planning.

For this coming round, one of the items we will be serving will be fruit cake. We feel it is in keeping with the Christmas theme. But before that day arrives, we plan to do a "dry run", and today it is. There's mixed fruit inside. My wife had planned to add some walnuts, but forgot, so the walnuts are still in their can.

This is the fruit cake my wife baked tonight, 27 October, 2016. This is hot from the oven. I think it comes out very nicely. Yes, the top cracks a bit but we have no problem with that. As I write this, I am waiting for the fruit cake to cool down, so that we can slice into it. I am already planning to enjoy it with hot black coffee tomorrow morning. Can't wait for morning to come!
