My favourite
Wan Than Mee stall in Penang is the one near the
Jelutong Market. It is located at a makeshift coffee shop facing
Ipoh Lane. You will see many wan than mee stalls at the market, so make sure you locate the right one.
My wife and I are quite specific how we want our wan than mee prepared. We want the soya sauce to be dark and thick. The noodles have to be
al dente, or in Penang Hokkien, khiu3. The wan than have to be meaty - often many stalls provide wan than that are almost empty. Finally, we like having both the sliced green chilli and the sambal. This is one of the few stalls that provide us exactly what we want.

To find this stall, go to Jelutong Market in the morning and look for the makeshift coffee ship where the only food hawker is the Wantan Mee stall. Its business is so good that the coffee ship doesn't need any other hawkers (although you can certainly order over dishes from neighbouring hawker stalls if you are not having Wantan Mee on that day.
My wife and I usually have our Wantan Mee breakfast there at least once a week. What we like about this Wantan Mee is that the noodles are very springy, and the wantans are meaty, unlike other places where there is little meat, just the skin.
Make sure you don't go too late, as you will not find a table, and you will have a long wait for your Wantan Mee. And if you found me having my breakfast at the stall, do say hello!

Updates
29 March, 2014: We continued to return to this stall every now an then. Now that the hawker knew that we want our wan than mee dark, ours is prepared to be exactly how we want it to be.
November, 2012: Although this stall remains my favorite for now, unfortunately the quality is not as good as it was in 2010, when I selected it. In my last two visits, the soysauce of the wan tan mee seems a little bit more watery (I like it thick) than it previously was. Did they change their recipe? Oh dear. I hope to see an improvement when I visit it again in future. Recipes must never be changed.
