Koay Kark Stalls in Penang

Penang Koay Kark, often written as Char Koay Kark, is a popular Penang hawker food found in many hawker centres and coffee shops. It is rice cakes fried in thick black soy sauce, with eggs, bean sprouts and chye por (preserved vegetable bits). The bean sprouts and chye por add crunchiness to the rice cakes which caramelise in the black soy sauce. Chilli paste gives it some spiciness according to taste. Seafood such as prawns and squid rings are often added as well.

Although Koay Kark appear very much like Char Koay Teow, there are noted differences. Unlike with Char Koay Teow, Koo Chye (chives) are rarely (or should I say, I've never seen it used) sprinkled over Koay Kark. The inclusion of prawns to Koay Kark is also not as common as with Char Koay Teow.

Ingredients of Koay Kark:

  1. rice cakes
  2. eggs
  3. bean sprouts
  4. chye por (preserved vegetable bits)
  5. prawns (optional)
  6. squid (optional)
  7. chilli paste, as desired
