My own home-made Lek Tau Thng (24 May 2008)
Penang Lek Tau Th'ng is a
Penang Nyonya sweet broth made from green beans. This dessert of Malay origin is often enjoyed during afternoon tea. When my wife makes it, she also adds sago pearls, which gives it a wonderful texture.
To prepare Lek Tau Th'ng, wash the green beans until the rinse water runs clear. Then soak it for half an hour. Bring to boil a pot of water, sugar (my wife uses rock sugar) and a bundle of pandan leaves. Then add in the green beans and leave it to simmer for another 30-45 minutes. Add in the sago pearls and continue stirring so that the pearls do not stick together in lumps and congregate at the bottom of the pot. Add in coconut milk and salt to taste. Bring it to a boil again. The lek tau thng is ready to be served.
In Penang, while lek tau th'ng is often prepared at home, you may occasionally find it being sold by push-cart hawkers.
