Our homemade Purple Carrot Cake (19 October 2016)

It is Saturday, 19 November, 2016. For our tea time today, my wife baked a Purple Carrot Cake. Now, if you take a look at the cake, for sure you would say, why call it a Purple Carrot Cake when the cake isn't purple in colour. Well, that's because we are using Australian Purple Carrot. The carrot is very dark purple in colour. In addition, she also put walnuts and raisins in the cake.
My wife applied a liberal layer of cream cheese over the top. Actually she flipped the cake over, to get a level surface, so the cream cheese is technically applied to the bottom! We had a piece each, for tea time, and then partitioned the cake to share with other family members.
