Roti Babi is a local Penang Chinese dish of bread stuffed with minced pork. It is said to be of Nyonya or Hainanese origin. The bread is coated with a layer of breadcrumbs and then deepfried. Of great importance is the dip, which is usually slices of red chilli and bird-eye chilli in either soysauce or, better still, with ang3mor3 tau33iu2 . Ang3mor3 tau33iu2 can simply be described as Worcestershire sauce, but for roti babi, I prefer not the Worcestershire sauce that comes right out of the bottle, but the one made by the Chinese (or perhaps Hainanese) chefs. Unfortunately, I don't have the recipe.

My late father was very much into this dish. In fact, after he retired, he decided to open a stall selling roti babi at a coffee shop in Air Itam. That lasted as long as his enthusiasm held up.

Today roti babi is not the most common Penang hawker food. Only a few stalls sell them. I will try to uncover and list them here, so that you have the chance to try it out. My wife and I are still working on making roti babi at home. Once we are satisfied with our recipe, we will share it to you here.
