Hawker Chan Liao Fan Hong Kong Soya Sauce Chicken Rice is a famous chicken rice stall in Singapore. Established by Mr Chan Hon Meng, it operates out of the Chinatown Complex Food Centre. Business for the chicken rice was good, but in July 2016, something akin to Midas touch descended on the stall, when it was bestowed (along with another Singapore hawker, the Tai Hwa Pork Noodle) with a single Michelin star. That was sufficient in star-crazed Singapore for a tidal wave of customers to throng the stall.

Visiting the Hawker Chan stall in Chinatown Complex Food Centre, I saw that business was so good, the queue for the stall form a long winding line, coiling around the entire food hall. To prevent overcrowding in front of the stall, customers have to wait at the top of the queue to approach the stall. Those ordering to do are limited to a maximum of 8 packs, to prevent the rest of the customers waiting too long. Nevertheless, it has been said that many have to wait an hour or more before getting served.

To address this sudden boom in attention, Hawker Chan has opened two other outlets, one of which is at nearby Smith Street, where diners can enjoy their chicken rice in air conditioned comfort.

I have not yet eaten at Hawker Chan. I only saw the stall as I pass by, but could not spare that long a time to wait in line for my meal. I will do this stall in the future, when I have more time to spare. Researching on Hawker Chan's chicken rice, I found out that most of the people who have eaten there said that the chicken rice is over rated and those going to the restaurant said that it is too expensive (at $20 for two persons). However, I saw that the price for a place of Soya Sauce Chicken Rice at the original stall at Chinatown Complex Food Centre is just $2.00. Hawker Chan uses this price to back his claim that this is the cheapest Michelin star meal in the world, and it definitely is.
