Sio Bak, or Chinese Roasted Pork, is an item that my wife makes from time to time. It only costs a fraction to make your own Sio Bak, compared to buying it from the market. What we enjoy most about homemade Sio Bak is the crispiness of the skin. It has to be pierced carefully, otherwise the skin will be hard and tough. But when done right, it is just delicious.
