Tau Eu Bak Recipe
Ingredients - to be marinated for 30 minutes
- 1kg pork belly, cut into desired thickness
- 5 tablespoons of soya sauce
- 3 tablespoons of dark soya sauce
- 10 cloves of garlic, lightly smashed
- 2 teaspoons ground pepper
- 1 star anise
Others ingredients
- 3 beancurds, into quarters (optional)
- 100g chestnuts, soak to remove the inner skin or pellicle
- Potatoes, skinned and cut into desired size (optional)
- Chinese shittake mushroom, soaked (optional)
- Hard boiled eggs (optional)
- Pinch of salt
Steps for cooking Tau Eu Bak
- Rub the pork belly with salt to remove odour. Rinse with running water.
- Blanch the pork belly in boiling water, simmering for 5-10 minutes to remove impurities.
- Clean and cut the pork belly into desired thickness.
- Put the cut pieces into a pot.
- Marinate the meat with soya sauce, dark soya sauce, pepper, garlic and star anise. Let it stand for 30 minutes.
- Heat up the pot on stove, stirring the meat as the pot is being heated up.
- Keep stirring and turning the meat until the gravy is boiling.
- Pour hot water into the pot just to cover the meat. Add in the chestnuts, mushroom and potatoes.
- Simmer until the various items are cooked and the meat is tender.
- Pan fry the cut beancurd in a little oil until brown, then add to the pot. Add in the hard boiled eggs.
- Adjust the taste accordingly. Add soya sauce or a pinch of salt if it is not salty enough.
Note : You can also add in some crushed peppercorn or dried chili to enhance the taste.
